an observation
Ok I know I'm not seeing things now since I watch closely today. Is this a bug/glitch. When a quarry/marble deposit/farm field is depleted the settler just moves on to the next which is nice, but, after you find a "new" deposit right back next to his building he stays mining/harvesting the field he switched to until that field/quarry is depleted then he comes back to the one next to his building also with the switched to field it is the farthest away from his building as he can get. I thought the switch back to "his" field/deposit would occur on the next production cycle but it does not. Just thought I would bring this up

Different things behave in different ways, so it's important to be clear.
When a copper, iron, coal or gold mine deplete, the worker that was assigned to it returns to your population "inventory." He doesn't move on to the next copper/iron/coal/gold mine, as there's already one worker assigned to it. If you send your geo out to discover the mine again, a worker from inventory is assigned to that mine when you build the mining building on top of the deposit.
When a stone or marble deposit is depleted, the worker assigned to your mason or marble mason building does move on to the next closest deposit. If you then send a geo out to rediscover the deposit, the worker will finish the current gathering cycle, and then he ~should~ seek out the closest deposit. Whether he does that or not with 100% accuracy, I can't say.
Fields would work in the same way as stone/marble deposits.
