So earlier today my session timed out, and when I came back I noticed that when I clicked on a production building, I could see how many resources all related deposits (including trees) had remaining. It's not showing up any more. Is there a way to toggle this option on/off, maybe something sneaky going on, or was I just tripping balls?

did you zoom in close enough to see the resource amounts ?
With the update it should show at any zoom level simply by mousing over the deposit's symbol
To see wood amounts Fkyx, you have to zoom in either using shift and +(zoom out with - ) or you can also expand options menu and use toggle camera controls tab for zooming in/out. Once you have zoomed in at least 2 clicks highlight a cutter or forestor and it will show the wood amounts. Also you can scroll map to areas doing this before makin cutters/forestors to find optimal areas to place them.
