So I've yet to start harvesting horses ( =P ), and was wondering if someone could tell me what exactly their uses are. I know higher levels are using them so surely they have a purpose.

For making cavalry. On some of the fights it's essential to bring, mostly the bosses who have the courageous tactic meaning that they take all the damage first; this can only be circumvented by cavalry to destroy the archers and dogs in these camps.

On hiatus from the game currently.
They help a lot with camps with (bandit equivalents of) bows, longbows, and dogs.
Against bows they kill them first so they can't deal high damage to your units
Against Dogs they kill dogs so that you can bring in your own bows for high damage.
For example, in the first Hard level camp with 200 longbow-equivalents(whatever they are called)
If you sent 200 militia you'd win, but you'd also lose 200 militia. With cavalry, you'd kill off roughly 180 of them without those getting a chance to attack and you'd only end up losing 20 cavalry.
In my opinion don't use cavalry against dogs 1:1 not all that great.
Just use them again bow stacks that are well guarded.(Metal Tooth,Chuck,200 Ranger are the first places you'll really need them)
Well for example with the 180 Thug 20 Dog camp, there's no way that isn't going to be messy unless you can get longbows in there to deal damage. Sacrifice 20 ponies and you are making it overall a cheaper win
