I just attacked him, and turns out he's a front line unit. So he's the only guy I did damage to, but didn't kill him. Does his HP reset between battles?

Yes. All bosses and minions regain their health points after each battle. If they are killed, they stay dead. There is a post on general on how to beat metal tooth.
