How do you replenish a mine's resource?

As in the way you can add fish food to the fish to increase their number. I know I saw it in the Tip of the Day startup screen: "Be sure to replenish your mine so that it isn't destroyed" or something like that.

I keep going through all the ore in iron mines, and the 250 hardwood/250 marble to replace it each time is killing me at level 19.

Thankfully you don't have to bother replenishing ore mines. When it is exhausted, simple click on it and tear it down. Have your geologist begin searching for that node type again. He'll find it in the same spot and it will be fully replenished.

Also I would like to say general questions like this can be answered much more quickly in the help channel in game. Use it, it's a great tool!

...and then you have to build a new mine.

If it's for stones no, you don't have to rebuild your mason. If it's for copper ore then yes because that mine will deplete and cause your building to go as well.

another way to refill mine is, in trader or gem shop, deposit tab, u'll find various deposit types, gold, iron, copper etc. u can also get refills from loot and daily rewards.
u can refill mines with them

If you tear it down while there is still ore in the mine, you will get some of your mats back; therefore, tear it down when there is only a few pieces of ore left. Next, send your geo out, and it will refill. I did this a couple times with copper, but it didn't return enough mats to make it worthwhile.

With an iron mine, you get back 62 HW, 62 M, 50 T, but I haven't tested this tear down method yet on iron. I just now put up iron mines, so they are all near full capacity atm. Can someone test this? It will be a couple days before my mines are low enough on ore.

u can tear down mines and getting 1-5th of the resource. most doesn't use this on copper, iron etc. but especially on gold mines, which r expensive to build.
