recruits are mostly used because they are so cheap. for any camp that requires recruits, you can also use militia or soldiers, but your losses (though smaller) will be more costly. its just so much faster and cheaper to rebuild recruits, than the same amount in militia or soldiers.
even when i use soldiers, i usually combine them with recruits so that i reduce the amount of soldiers lost in any given battle.
But doesn't it take longer to get more bodies then? So are soldiers/militia just not used much in general?
This is why you need a proficient bread production so that you can go to the provisions house and make retired bandits to bolster your settlers count.

It also depends on which adventures you're looking at. As they increase in difficulty, you'll see Millitia and Soldiers used more. But Recruits are meat shields and to the extent that you can wipe out a bandit camp while losing 75 Recruits, most people will choose that over losing 25 Soliders every time. At some point, you'll have to focus on bread production and/or acquisition to increase your population rebuild rate. Some adventures will consume 3k+ troops. No one's going to wait 30 days for those to reappear on their own when you can replace them in a day or so with bread & a provision house.
personally i don't use militia at all, just recruits and soldiers. since steel swords cost approx 10x what bronze swords cost, i can have 250 recruits for the same price as 25 soldiers. the only time i use soldiers (usually paired with longbowmen) without recruits is against bosses, but that's not even 100% of the time. again, feel free to use the better troops, i think you'll change your mind when you have to replace those losses tho.
I use militia in two cases:
1) When I'm too lazy to wait to train more recruits and I just want to finish up an adventure (not very often)
2) When I'm too lazy to wait for a general who is currently attacking a camp that requires say 50 recruits and 150 solders to finish and I want to fight another camp at the same time with 50 recruits and 150 militia (militia do almost as much dmg as soldiers).
As you can see, both cases are due to me being in a hurry.
