I'm not sure if lvling up copper mines also increases the amount of copper taken from the deposit. any help would be appreciated.

It does. lvl two mines take two copper from the deposit each cycle and so on.

It does not increase the overall amount taken. Only buffing does that.
A level 5 mine simply removes what's in the mine 5 times faster.

I usually run my copper mines at lvl 2, but because I run negative on copper (6 mine limit sucks) every few days I have to swap them to lvl 3 and get a friend to buff them so I can rebuild a surplus of copper ore. The only benefit of leveling them higher and buffing them is to take in faster than you consume and build a surplus.
