I open the trade window and update and see 10's of offers. Then I look over at my grandson's trade window and he has 100's of offers. Other times it is vice versa.

Why do we not see the same trades available?
It has to do with how long you have been logged on for. When you press update it will sometimes show you all trades that have been posted since you logged in. This is how people still get offers for a trade hours after it has expired.
