IS there a limit to total geologists from the tavern, it doesn't specify why it is grey'd out but alot of people said they had more than 3 geologists so why is mine not letting me buy any more ?

I think the limit is 3 from the Tavern. If people have more, they probably picked up the Jolly Geo from the Store.

You can buy as many Jolly Geologists from the gem shop as you like. Don't know why some people would have 10+ Jolly Geologists....

Well when searching something that takes ours when you may need stone its handy to have a spare geologist
Also, you can find extra resources even if you have no mines to find. great for getting spare 50+ gold ore every two hour search. keep re-sending and get 1 or 2 out of every four jollies sent. key is to use geo spec bookbinder items. careful, put no more than 5 books per line to get 1 in the very top row for 21/21 types.
You can get a jolly geologist from the guild coin shop for the remainder of today .... after that it rotates out.
