I think yellow arrows are for things that are "used" up but not in the economy - bread, swords, etc.

i think you're right about colors
except green can also mean we're overproducing and growing fat and its not very efficient
if i were to color code, id make green only when its nearly balance for both minor surplus and deficit, red if itll run out or surpass storage capacity in next 12 hrs and yellow for everything else

Overproducing isn't always a bad thing. I would much rather make more of the things I need then not enough, all things being equal. You can always sell the surplus through trade. In my opinion it should stay green.

Clarification - Yellow means an item *immediately* behind in the chain is draining.
Draining wheat, for example, will turn Beer Yellow, but not Bread.
